I made these "cupcakes" and my hubby thought they looked yummy until he bit into one and was suprised to learn that they were not sweet, but savory! The cupcakes are actually mini meatloaf patties topped with pink tinted mashed potatoes:) Perfect for April 1st! I found this recipe in a recently purchased magazine titled "Celebrate," the Spring edition. An issue comes out four times a year to celebrate each season. It's full of great ideas, recipes and photos!

Gotcha! Trick Cupcakes
(Makes 15 cupcakes)
1 pound lean ground beef
1 clove garlic, minced
1/3 cup shredded colby Jack cheese blend(I only had cheddar and it worked great)
1/4 cup toasted bread crumbs
1 tablespoon Worcestershire sauce
1 teaspoon dried Italian seasoning
2 large eggs, beaten
2 2/3 cups frozen mashed potatoes(I used "instant" and followed directions for 8 servings)
1 1/3 cups whole milk(I just used the milk amount for the instant potatoes)
1 tablespoon butter(again, I used what was called for on the instant mashed potatoes)
1/2 teaspoon salt (ditto...)
3 or 4 drops red food coloring
Preheat oven to 350 degrees. Place foil liners into 15 muffin cups.
In a medium bowl, combine ground beef, garlic, cheese, bread crumbs, Worcestershire sauce, Italian seasoning, and eggs, mixing well.
Spoon mixture evenly into prepared muffin cups. Bake for 12-15 minutes, or until done.
Prepare (frozen) mashed potatoes according to pkg. directions using 1 1/3 cups milk. Stir in butter, salt, and food coloring.
Spoon potatoes evenly over meat mixture, spreading gently to resemble frosting.
