Peanut Butter Cookies for National Homemade Cookie Day/National Cookie Month

 Did you know that today is National Homemade Cookie Day and October is National Cookie Month! That being said, I thought it would be appropriate to provide a cookie post today. As a classic American cookie, I think peanut butter ranks right up there with chocolate chip and oatmeal.  I thought this recipe would be a good way to start out this special cookie month! I have tried MANY peanut butter cookie recipes over MANY years, and finally found this keeper of a recipe from my sister-in-law.  It makes the perfect peanut butter cookie!  The cookie is crisp around the edges, but chewy in the middle...Mmmm, Mmmm, Mmmm.

(I added some Reese's pieces to lend some fall colors to the cookies)

Peanut Butter Cookies

Preheat oven to 375 degrees

Mix together thoroughly:
1 cup shortening (half butter)
1 cup peanut butter
1 cup  white sugar
1 cup brown sugar
2 eggs
I  cream all of this together in my Kitchen Aid stand mixer and then mix in the dry ingredients:

2 1/2 cups all purpose flour
1 teaspoon baking powder
1 1/2 teaspoon baking soda
1/2 teaspoon salt

Chill dough.  Roll into balls(I use a cookie scoop) the size of large walnuts.  Place 3" apart on lightly greased(I use ungreased stoneware baking sheets)cookie sheets(or you could use parchment paper). Flatten with a fork dipped in flour and crisscross the top of each cookie, pressing down lightly.

Bake 10-12 minutes in your preheated oven just until set with a touch of golden brown.  Don't overbake.

  6. Hello Sue! I love that yesterday was the kick off of National Cookie Day and Month! - worked out great because the 12 Weeks of Christmas Cookies group that I have recently joined kicked off our 12 weeks of cookie recipes yestereday. :-)

    LOVE how you added Reese's Pieces into your PB cookies....adds a special yumminess to them definitely.

  8. I can't believe that I missed National Cookie Day. I ate 1 Oreo, does that count? Peanut butter is my favorite cookie. Your description of this cookie sounds like everything I want a cookie to be. I'm going to make it the next batch!

  12. I had no idea there was such a thing as National Cookie Day! Who thinks of these things? I have made some of your peanutbutter cookies before and if these are your FAVORITES, I'll be making these as well. They do loove delicious.

  13. I didn't know that, but I bet Joni would know that, she knows those kinds of things. I will have to bake some cookies just in honor of that and these look so delish. I have a really hard time with cookies and homemade bread, I can't stop at just one, I eat until I am full. Now chocolates, I can be moderate on. It is a curse, I know, but I guess I will make some anyways!

  15. Happy National Homemade Cookie Day and month! Now that this is a month of homemade cookies, I need to bake my own homemade cookies. Probably pumpkin cookies are the best when fall. I got a new recipe and it is called spicy pumpkin cookies. It’s my first time to try this one. I hope it will taste good.
