I was almost giddy when I saw a Walmart ad in the paper for Oreo gingerbread truffles:) I ran to the store the next day, but couldn't find them! I spotted a clerk and he couldn't find them either, but we walked around a bit, and lo and behold, there it stood in front of us...a whole display island of Gingerbread (and other holiday) Oreos! Woo hoo!
Oreo cookie truffles are nothing new (though I've never made them) but gingerbread Oreos, now that's another story.
If you haven't tried them, you really need to track some down; they're a new taste treat:)
Now on to the truffles...they're as easy as one, two, three.
Oreo Gingerbread Cookie Truffles
1 package Oreo Gingerbread Cookies (15.25 ounces)
3 ounces cream cheese, room temperature
6 ounces vanilla bark
Put the cookies into a food processor and process into fine crumbs. Add the cream cheese until fully incorporated and the cookies hold together. Scoop the dough into 1-inch balls and place on baking sheet. Place in the refrigerator for about 15 minutes. Melt the vanilla bark according to package directions. Use a fork to dip each ball in the melted bark and let the excess drip off. Set on baking sheet. Add a decorative sprinkle(s) and some spices (or cookie crumbs) to the top of each. Let dry. Delicious!
Makes about 2 dozen truffles.
