Corn Dog Mini Muffins

I have seen these mini corn dog muffins all over Pinterest, so when Fleischmann's contacted me to try out their Simply Homemade* Cornbread Baking Mix, I couldn't wait to try it! 

Two of my little grandsons were over and I knew they would be happy to be my Number 1 and Number 2 taste-testers. :)  They both love hot dogs and muffins, so these little, tasty gems were right up their alley. 
 The boys (and adults too, I might add) loved these, and they were gone in a flash!
I will definitely be making them again. 

Corn Dog Mini Muffins
Simply Homemade Cornbread Baking Mix
2/3 cup milk
1/3 cup butter, melted
1 egg
Hot dogs, cut into 1-inch segments, and grilled in pan on stove top.
Ketchup and mustard (optional)
Place mini muffin liners in mini muffin pan. Set aside.
Combine cornbread mix, milk, butter and egg in large mixing bowl with a spoon, stirring until all ingredients are moistened.
Spoon batter into muffin cups filling 2/3 full.
Place a hot dog segment into the center each muffin.
Bake in the oven for 11-13 minutes.
Let cool on wire rack for a few minutes.
Dip in ketchup or mustard if you'd like. :)
